Easy & Delicious 'Comfort Food' Recipes

Hi All. For those of you that don't know me, I do not like to cook and have stated this many times. This being said, I can not allow my family to starve, so cook I must. Besides, there are only so many nights one can order take out!
Don't get me wrong, my husband doesn't mind cooking (and he certainly does it), but he gets home later than I stop working (I work from home). I stop working at 4:30, and I pick up Julianna from daycare, and put her down for a catnap as soon as we get home. Perfect timing for me to start cooking.

So it's just my routine to try and get dinner going by the time Brian gets home. He takes care of Jules while I finish making dinner. He gets her up from her nap, changes her and feeds her dinner (thank God for my husband!), then she sits at the table with us while we eat dinner. It works out rather well... and he gets to spend a little quality time with Belle when he gets home from work.

Anyway, with all this snow & cold weather, I thought it was the perfect time to share some "Comfort Food" to warm the heart & soul with. I have a few recipes I want to share that meet all my requirements: Easy, tastes great, not too fattening, and did I meantion *easy*.

Crockpot Chicken Cacciatore - Printable Recipe 
This is so easy and yummy. It's something a little different for the Crock Pot.


Crockpot Portuguese Chicken - Printable Recipe
This is probably my favorite Crockpot recipe. Everyone I make this for anyone, they love it! It is true Comfort food that your family will gobble up. Do not let the Chorizo scare you away.



Chicken Potato Casserole - Printable Recipe
I love this casserole and you can make half and freeze the other half for another night like we do! It is sooo tasty!



Crock Pot London Broil - Printable Recipe
This is my favorite and I never make a roast any other way now.


Sicilian Casserole - Printable Recipe
This is so tasty and another one that is easy to split into 2 and freeze half for another night. I usually serve this with a big salad.



Heirloom Carrot Spoon Cake - Printable Recipe
This is simply incredible! It is the easiest dessert you will ever make - and sooo yummy in the winter time! :)

  3. These look so delicious...I am going to schedule days for them right now! I am so excited to try the crock pot recipes...I am home during the day, but rarely have time to cook a big dinner, so using my crock pot is a lifesaver. By the time 5:00 rolls around I want to eat...not fix anything!

    Kitten - You have talent ... i have seen some of the pictures of the nice afternoon lunches you have made- way better than I can ever do! :) Trust me, there is no talent behind my recipes LOL.
